Jamie Cooper of Jamie’s of Kettering:

Jamie has been in butchery for 23 years and left school at 14 to work in Clays of Kettering where he now owns. His Mum and sister used to work at Clays and he used to go to the shop after school on his bike and do tricks outside for passerby. One day his Mum said “Get in the shop and do some washing up” Jamie has one ethos “ Progress and be successful” he loves getting up for work every day. He preaches to staff about excellent Customer Service and making sure they have one to one contact, about going the extra mile and he wants his customers to come to the shop for the whole experience and leave happy. He is very competitive and that is evident when you meet him, he is very entrepreneurial and he will bend over backwards to ensure he achieves his goals in life and business.

Steve Perrins of Taylors Farm Shop Lathom:

Steve has been in butchery for 38 years and joined Chadwick’s of Wigan cleaning up. He left school and became an apprentice at Chadwick’s until the age of 21, he then bought his own shop where he stayed for 15 years.

He joined Taylors in 2005 where he became there first full time butcher and help them win Farm Shop of The Year in 2015 & 2017. Steve believes in “Do what the customers wants and make sure everyone is customer driven” He has seen things change over the last 14 years at Taylors and seen the need to change, with innovation and new products. People are always looking for new ideas.

Steve Connor of Woods Butchers Knutsford:

Steve started in butchery 45 years at the age of 16 cleaning up after school at ER Hughes in Liverpool and then became an apprentice learning all aspects of butchery. From there he owned 9 different shops in the Liverpool area and has been in his current shop for 17 years. The thing that Steve believes makes him successful is making sure he keeps up with the food trends and adapting to what the customer wants. He is a big advocate of presentation & quality and he wants his customers to have an experience when they come into the shop.

James Lally of James of Shepperton in Surrey:

James started in butchery 21 years ago after a serious injury playing professional rugby at the age of 19 for London Irish cut short his career. He also played for England Under 21’s team where he was given a sports scholarship. His obvious career choice was to go into his Dad’s wholesale meat business where James started to deliver meat & bacon to café’s , then diversifying into butchers where James become fascinated by the butchery industry, James then opened his first shop just outside of Shepperton supplying restaurants and catering businesses where he used to supply the restaurant of Marco Pierre White. James stayed in this shop for 15 years and then came the opportunity to buy a bigger shop on Shepperton High Street where the footfall was a great deal higher and his trade moved from Wholesale to Retail Butchery. James joined the Q Guild and was soon winning awards and recently won Best Traditional Sausage in the South East during “British Sausage Week”. He was also a finalist in Meat Management’s Butchers Shop Of The Year in 2017. In 2014 James represented Great Britain in the Tri Nations Butchery and was honoured to do so.

Tom Wood of Tom Wood Artisan Butchers in Blackburn:

Boning a full shoulder of pork, preparing and displaying it in front of a live audience was just one of the challenges head butcher Tom Wood faced in a competition in 2015 to find the UK’s best butchers. Tom who is the managing director of Tom Wood Artisan Butchers Ltd, applied to take part in the contest at London’s International Food Exhibition back in 2015. There was around 50 Butchers competing from all over the UK for five places on The British Butchery Team. It was tough but I thoroughly enjoyed it, “says tom, who was able to showcase the skills he has learned during his career. “I learnt my trade at Alpes in clitheroe but butchery has been in my family for longer than I can remember.
